How many wines from the Limoux appellation are effervescent ?
Three!!! This is exceptional for a single region.
They are: Blanquette de Limoux, Crémant de Limoux, and Blanquette Méthode Ancestrale.
What is an AOC (appellation d'origine contrôlée, or protected designation of origin) ?
An AOC guarantees the terroir (soil type and quality) and the character specific to a given wine.
An AOC must follow strict rules of production.
The AOC designation indicates a specific region or group of communities in which a vineyard is planted.
To have the right to be an AOC, a wine must be made of the highest quality grape varietals, specifically recognized for a given area, planted in selected soils and vented according to regional traditions.
The cultivation of the vines, yields per acre, and alcohol content are all set by law.
What is the difference between a brut and a demi-sec ?
The amount of sugar added (dosage) at the end of the vinting process (liqueur d’expédition) will determine if the wine is
brut (dry) or demi-sec (sweet). If the sugar level is less than 15 grams/liter, the wine is brut.
If the sugar level is between 33 and 55 grams/liter, it is much sweeter, thus demi-sec (literally, half-dry).
What is a blanc de blanc ?
A wine whose grapes are all from the same harvest. The year of the harvest appears on the label.
What is a vintage wine?

Should Crémants and Blanquettes de Limoux be cellared for aging?
No, we take care of the aging process in our cellars; when we sell our wines, they are ready for drinking.
We guarantee their consistent quality for a period of three years after their purchase.
What is the difference between a Blanquette de Limoux and a Crémant de Limoux?
They are made in identical fashion. The BDL is the result of five centuries of tradition.
Its specificity is derived from the Mauzac grape varietal.
Typical of our terroir, this grape reveals aromas of green apples and white fruits and offers a superb alliance of fruit and freshness.
Crémant de Limoux, whose composition is balanced around a blend of Chardonnay and Chenin grapes, is recognized for its great vivacity
and its aromas of white flowers with hints of toast and honey.
As far as the production process, what is the difference between a Crémant de Limoux and Champagne?
None. The wines are vinted in exactly the same fashion, only the terroir and the grape varieties are different.
What is a Blanquette Méthode Ancestrale ?
The fermentation process for BMA is both mysterious and natural.
It is not the result of sophisticated blending and aging.
The naturally high sugar levels in the Mauzac grape when late harvested imbues this wine with its natural sweetness.
BMA has only 6° of alcohol and offers up a unique taste that is emblematic of the terroir and the history of Limoux.
